2021 er en mesterlig årgang for Sottimano, hvilket virkelig afspejles i denne enestående udgave fra den historiske Cru, Cottá.
Cottá ligger med en sydvest-vendt eksponering. Her ejer Sottimano 2.8 ha og producerer i gunstige årgange ca. 10.000 flasker fra de ca. 60 år gamle vinstokke. I forhold til Basarin-marken har Cottá et større indhold af ler, hvorfor vinen generelt er dybere og mere koncentreret.
Som det er tilfældet med alle Sottimanos vine, dyrkes de efter biodynamiske principper med størst mulig respekt for naturen. Derfor ingen sprøjtemidler - men hårdt arbejde i marken og kun tilsætning af et minimum af svovl, som i øvrigt kun sker i forbindelse med tapningen på flaske.
Vinificeringen sker med naturlig gæring og uhyre lang tids maceration, hvor mosten er i kontakt med drueskallerne igennem hele processen. Efterfølgende lagres vinen på fransk eg fra den legendariske fadproducent, Francois-Frères i Bourgogne, hvor af 10% er af ny afstamning.

The 2021 Barbaresco Cottá is one of the most forward wines in this range, as it so often is. Aromatically expressive and light on its feet, the 2021 delivers tons of flavor intensity, but without excess weight. A return to more traditional winemaking has lightened the Cottá considerably, away from some of the jammier interpretations of the past. I imagine the 2021 will drink well with minimal cellaring.
